Since my son watched Cowspiracy and grew his conscious heart and mind about the correlation between food choices, namely meat and dairy, and the environment and I have tried hard to champion his move towards eating a plant-based diet. I mean ‘what do vegans eat?’ was my first thought. To start off with I was as strict as he was but my weakness is cheese and you cannot beat a dippy egg! So I tried to be more vEGGan as is Luke. There are some fantastic meat alternatives and also some poor ones. Aldi have a range of Plant based foods and vegan brioche rolls and we’ve discovered that we can’t get away with avoiding Co-op and Tesco (pricey) as the Richmond Meat free sausages are quite nice.

In the Winter I like to whack the slow-cooker on in the morning and come home to a nice stew, I plop dumplings in and pop it in the oven to finish. The girls still eat meat. Some of our favourite meals are the classics, risottos, spag bol, macaroni cheese, and our favourite a nice roast dinner! But we also like paella, curries, and stir fry too.

For quite a while we used Hello Fresh and once Gousto but we found it tedious when ingredients were squashed or missing and the vegan options were limited. On Instagram I follow VeganPowerBowls and there are some great ideas there.

The key to eating healthy and well, I have found, is planning! You are less likely to eat a rubbish meal if you have a menu planned for the week to work around activities and the ingredients for those meals in the pantry, fridge or freezer. You save money too as you are less likely to fall back on takeaways although a treat in our house is a curry takeaway from Khushi!

I have been ‘growing my own’ veg and salads in my raised beds and allotment which has been wonderful – straight from the garden to plate and so fresh.

In our home, we make a mark on the eggs in the basket that needs to be used first. It takes on its own art form sometimes…
